Traditional balsamic vinegar is made from cooked must (trebbiano or lambrusco grape juice concentrated by boiling) that is fermented and then aged for a minimum of 12 years (minimum, silver cap) or 25 years (extra-vecchio, gold cap) in a battery of barrels of decreasing size made from different woods (oak, chestnut, cherry, ash, mulberry) — each wood contributing distinctive flavor compounds as the vinegar concentrates over time. The result is a dense, syrupy (8–10% acidity, 1.2–1.4 specific gravity), intensely complex condiment — used by the drop, not by the tablespoon. A few drops over parmesan, strawberries, vanilla ice cream, bresaola, prosciutto, or a steak is its proper use. Commercial balsamic di Modena IGP is a legitimate product (wine vinegar + cooked grape must, no aging requirement) suitable for cooking and salad dressings. Industrial balsamic (in squeeze bottles, with caramel coloring, thickeners) approximates only the color and generic sweetness. The Consortium of Traditional Balsamic Vinegar of Modena DOP certifies the authentic product.
